First of all: Super delicious! On Christmas Day, I served this delicious roast with a simple potato gratin (also here in the database). Both my guests and I were thrilled. The meat was super tender and aromatic, the sauce was a dream! However, I slightly adapted the sauce by adding some tomato paste and sugar to adjust the acidity of the Chianti. Everything else was as stated in the recipe. This recipe will surely end up on our table many more times... ASZ
