During his time there, he fell in love with grilled cheese sandwiches and conceived the idea of pairing different cheeses with sauces to recreate the experience of a cheese plate in sandwich form. After experimenting with hundreds of combinations, Burro Grilled Cheese Kitchen opened in 2013 and quickly became a beloved staple in Austin’s food scene. The name is inspired by the Balkan Burro cheese, the most expensive cheese in the world, which can cost up to $750 per pound. If you're going to dedicate yourself to making excellent grilled cheese, why not strive to be among the very best? What I tried: the Long Tall Texan—with sourdough, aged cheddar, brisket, and that distinctive serrano pineapple sauce. This sandwich offered an ideal blend of rich, savory, and sweet flavors! I had to share it with my friend, as it was quite the hefty portion. While the sandwich was a bit tough in certain spots, it still made for an enjoyable experience at this food trailer!
I had been eagerly anticipating trying Burro's grilled cheeses after hearing so much hype, so I was thrilled to finally visit their food truck on Rainey Street! I chose the Waylon Willie, which featured aged cheddar, Gouda, caramelized onions, and pepperoncinis, all grilled between two slices of sourdough bread. The sandwich was quite impressive—it had a wonderfully crispy exterior, and the onions and pepperoncinis paired perfectly with the gooey cheese. However, my favorite part of the meal was dipping the grilled cheese into the habanero Yellowbird sauce. The sauce packed a spicy punch while still being flavorful, which really enhanced the salty and savory elements of the sandwich. While it may not have been the absolute best grilled cheese I’ve ever had, it certainly ranks high on my list. Overall, the food truck had a fantastic atmosphere and the long lines were absolutely worth the wait!
I ordered a grilled cheese with pepperoncini peppers, but it leaned towards the sweeter side, which I didn't particularly enjoy. The staff was friendly, but I wouldn’t return based on the food alone.
I got the Long Tall Texan and it was so good! It has sourdough, aged cheddar, brisket, and a Serrano pineapple sauce. The sauce isn't spicy though, which I made sure to clarify before because I can't handle spice. It's all delicious and would eat here again!
I went to the food truck on Rainey Street. I got the classic grilled cheese it was good but not that great pretty ordinary grilled cheese. The specialty ones looked better.
