El Corral - Copperas Cove

What a fantastic discovery! As someone new to the area and eager to explore local restaurants, I’m thrilled to have found this gem. The staff was incredibly attentive, and the service was excellent. The food was outstanding! The chicken I ordered was perfectly tender and bursting with flavor. Our salsa was the highlight, striking the perfect balance of taste and just the right amount of spice when paired with chips. The atmosphere was relaxed and casual, creating a welcoming vibe. We'll definitely be returning!

The barbacoa is perfect—thankfully, no bay leaves—and the breakfast menu is available all day, featuring incredibly fresh dishes. I do wish the taco salad included rice, but everything I tried was delicious. The fajita burritos are generously filled as well. It’s disheartening how few authentic Mexican options there are; even Taco Bell has long lines at night as if it’s offering a gourmet meal! After experiencing the variety of eateries in Austin, I really miss that selection, but El Corral has become my go-to spot here in Copperas Cove. Lastly, the horchata is just the right amount of sweetness.

If you haven't visited this place yet, what are you waiting for? The food is absolutely delicious, and we never dine anywhere else. The drive-thru service is quick, and if you call in your order, it'll be ready for you when you arrive. As of July 5, 2022, I believe the interior is not open, so your best bet is to call ahead or use the drive-thru. In my opinion, it's the best spot around!
