Copal Progressive Mexican Cuisine

This was my first time dining at this restaurant and it was fantastic! I ordered a carnita burrito with garlic rice and jalapeno poppers as the side dish. The food was served hot and beautifully presented. The burrito was bursting with flavors and the supposed simple white rice turned out to be delicious garlic rice. The jalapeno poppers were crispy and fried in fresh oil. As a fan of Mexican cuisine, I can confidently say that this was the best Mexican food I have ever tasted. I am now eager to try everything else on the menu.

I organized a large group of about 20 people at Copal on August 1st and had a fantastic experience. Our server, Rudy, did an amazing job keeping everyone's orders organized and making sure the drinks and food were served promptly with a friendly attitude. The food was delicious, especially the cucumber jalapeño margaritas. I will definitely be recommending Copal to my friends, whether they are dining in a small group or a large party of 20.

I recently dined at this restaurant for the second time and it was delicious! I enjoyed the atmosphere and our waiter Pedro was very polite and attentive. I ordered the chicken flautas and they were delicious. The pineapple mojito and guacamole were also exceptional. Thank you for a great meal, Copal!

Copal is the best Mexican food in Lincoln. Hands down. End of discussion. The menu is creative and authentic. The drinks are well made. The pricing is more than reasonable. Everything is absurdly delicious and beautifully presented. TRY IT IF YOU HAVEN'T! Also, shout out to our amazing server Agustin. He was incredible!

Went in around Noon on Saturday. Cool feel to it. I liked the presentation of the place, not a lot of crazy stupid **** on the walls. I had the Mexicano with a side of rice and jalapeño poppers. It was freaking amazing! The presentation of the food was 10/10. Taste was 10/10, and service was 10/10. I drove by one day and said to myself I needed to try that place. Asked around, only found one person that has been there and they freaking loved it too. Plenty of parking and felt really clean. Would recommend!
