Ok so first off my family are a bit Italian food snobs. My mom born and raised in Italy and pushing 90) usually makes her own ravioli but I convinced her for Christmas let's buy home made ravioli from this pasta bakery I heard about. She looked at me like I was nuts but agreed. Ok we try. We bought the lobster ravioli. She insisted cooking it herself. Homemade pasta you put in once it come up, it's cooked. Quick. It came up but wasn't cooked. 10 min later, still not cooked. 15 min later. Not cooked My mom says where did you buy this ravioli that doesn't cook. Bella Ravioli. Va funculo bella ravioli she says. At 20 min it was still doughy but she said we got 30 people waiting to eat but tell them these are not mine. You bought them. We made a white cream sauce that gave it a great flavor but honestly it's thick, tasteless dough. With very little lobster filling. My mom thinks they forgot eggs in the dough. Next year. She says.
